produ\u00e7\u00e3o de\u00a0 alimentos\u00a0 era\u00a0 limitada.\u00a0 A\u00a0 culin\u00e1ria\u00a0 colonial\u00a0 do\u00a0 pa\u00eds\u00a0 pode\u00a0 ser\u00a0 dividida\u00a0 em\u00a0 quatro correntes:\u00a0o\u00a0litoral\u00a0a\u00e7ucareiro;\u00a0a\u00a0do\u00a0norte;\u00a0os\u00a0Bandeirantes\u00a0que\u00a0partiam\u00a0de\u00a0Vila\u00a0de\u00a0S\u00e3o Paulo do Piratininga;\u00a0e\u00a0a\u00a0pecu\u00e1ria.<\/p>\n<p>No\u00a0norte,\u00a0os\u00a0habitantes\u00a0dependiam\u00a0mais\u00a0dos\u00a0conhecimentos\u00a0ind\u00edgenas\u00a0para\u00a0sobreviver e, por\u00a0isso,\u00a0sua\u00a0alimenta\u00e7\u00e3o\u00a0inclu\u00eda\u00a0pratos\u00a0e\u00a0ingredientes\u00a0como:\u00a0carne\u00a0de\u00a0peixes,\u00a0carne de jacar\u00e9s,\u00a0tartarugas,\u00a0peixe-boi\u00a0que\u00a0fazia\u00a0a\u00a0manteiga,\u00a0e\u00a0frutas.<\/p>\n<p>A\u00a0alimenta\u00e7\u00e3o\u00a0ind\u00edgena\u00a0tinha\u00a0como\u00a0alicerce\u00a0a\u00a0mandioca,\u00a0na\u00a0forma\u00a0de\u00a0farinha\u00a0e\u00a0beijus, mas\u00a0tamb\u00e9m\u00a0 de\u00a0frutas,\u00a0 pescado,\u00a0 ca\u00e7a,\u00a0milho,\u00a0 batata\u00a0 e\u00a0 pir\u00f5es\u00a0 e\u00a0 com\u00a0 a\u00a0 chegada\u00a0  dos portugueses,\u00a0 do inhame\u00a0trazido\u00a0da\u00a0\u00c1frica.<\/p>\n<p>Ao\u00a0 lado\u00a0 da\u00a0farinha\u00a0 e\u00a0 do\u00a0 beiju,\u00a0 a\u00a0ca\u00e7a\u00a0era\u00a0 outra\u00a0 das\u00a0 principais\u00a0fontes\u00a0 de\u00a0 alimento.\u00a0As principais\u00a0 carnes\u00a0 eram\u00a0 as\u00a0 de\u00a0mam\u00edferos\u00a0 como\u00a0 o\u00a0porco-do-mato,\u00a0 a\u00a0paca,\u00a0 o\u00a0veado\u00a0 e a\u00a0anta,\u00a0 que\u00a0 servia\u00a0 como\u00a0 compara\u00e7\u00f5es\u00a0 ao\u00a0 boi.\u00a0As\u00a0 carnes\u00a0 era\u00a0 preparadas\u00a0 com\u00a0 pele\u00a0 e v\u00edsceras,\u00a0o\u00a0pelo\u00a0 queimado\u00a0pelo\u00a0 fogo\u00a0e\u00a0os\u00a0 mi\u00fados,\u00a0\u00f3rg\u00e3os\u00a0internos,\u00a0depois\u00a0retirados\u00a0e repartidos.<\/p>\n<p>Todos\u00a0 os\u00a0 povos\u00a0 ind\u00edgenas\u00a0 usava\u00a0 o\u00a0fogo\u00a0para\u00a0 se\u00a0 aquecer,\u00a0 na\u00a0 realiza\u00e7\u00e3o\u00a0 de\u00a0rituais e\u00a0 para\u00a0 preparar\u00a0 os\u00a0 alimentos.\u00a0 As\u00a0 principais\u00a0 formas\u00a0 de\u00a0 preparo\u00a0 da\u00a0 carne\u00a0 era\u00a0 coloc\u00e1-la\u00a0 sobre\u00a0 uma\u00a0 arma\u00e7\u00e3o\u00a0 de\u00a0 madeira\u00a0 at\u00e9\u00a0 ficar\u00a0 seca\u00a0 para\u00a0 que\u00a0 assim\u00a0 pudesse\u00a0 ser conservada.\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0<\/p>\n<p>Muitas\u00a0 vezes\u00a0 a\u00a0 carne\u00a0 servia\u00a0 para\u00a0 o\u00a0 preparo\u00a0 de\u00a0pir\u00f5es,\u00a0 mistura\u00a0 com\u00a0 farinha\u00a0 de mandioca\u00a0e\u00a0caldos.<\/p>\n<p><strong><em>A Culin\u00e1ria<\/em><\/strong><\/p>\n<p>A\u00a0 culin\u00e1ria\u00a0 nordestina\u00a0 \u00e9\u00a0 fortemente\u00a0 influenciada\u00a0 pelas\u00a0 suas\u00a0 condi\u00e7\u00f5es\u00a0 geogr\u00e1ficas e\u00a0 econ\u00f4micas,\u00a0 ao\u00a0 longo\u00a0 da\u00a0 hist\u00f3ria,\u00a0 assim\u00a0 como\u00a0 pela\u00a0 antiga\u00a0 mistura\u00a0 das\u00a0 culturas portuguesa,\u00a0 ind\u00edgena\u00a0 e\u00a0 africana.\u00a0 As\u00a0 comidas\u00a0 quase\u00a0 sempre\u00a0 t\u00eam\u00a0 como\u00a0 ingredientes  vegetais,\u00a0 carnes\u00a0de\u00a0gado\u00a0 bovino\u00a0 e\u00a0caprino, peixes\u00a0e\u00a0frutos\u00a0do\u00a0mar,\u00a0variando\u00a0bastante   de\u00a0regi\u00e3o\u00a0para\u00a0regi\u00e3o,\u00a0 de\u00a0acordo\u00a0com\u00a0suas\u00a0 caracter\u00edsticas\u00a0peculiares.<\/p>\n<p>Pratos\u00a0 da\u00a0 Regi\u00e3o\u00a0 do\u00a0 Nordeste\u00a0 incluem\u00a0 a\u00a0tapioca,\u00a0 o\u00a0 vatap\u00e1,\u00a0 a\u00a0 moqueca,\u00a0 o\u00a0bai\u00e3o de\u00a0 dois,\u00a0 carne\u00a0 seca,\u00a0 queijo\u00a0 coalho,\u00a0 manteiga\u00a0 da\u00a0 terra,\u00a0 o\u00a0mugunz\u00e1,\u00a0caruru,\u00a0 iguaria de\u00a0 origem\u00a0 ind\u00edgena\u00a0 adaptado\u00a0 pelos\u00a0 escravos\u00a0 nos\u00a0 engenhos.\u00a0 Os\u00a0 pratos\u00a0 com\u00a0 forte influ\u00eancia\u00a0 africana\u00a0 como\u00a0 tamb\u00e9m\u00a0 farofa,\u00a0 pa\u00e7oca,\u00a0canjica, pamonha,\u00a0 carne de
